Nevertheless, it is often overlooked since meat is usually more accessible, less expensive and considered easier to prepare. But if you take a closer look at this recipe, it can be actually quite simple to prepare a great tasting fish dish!
In this recipe we are using cod but of course you can use any of it’s members of the North Atlantic family, such as pollock or haddock. You will find most of these fishes in the deep freezer compartment of your supermarket.
Ingredients:
- 500 grams of cod (preferably in frozen chunks)
- 1 egg
- 1,5 tsp turmeric
- 1 tsp chili flakes
- 1 tsp dried coriander
- 1/4 tsp salt
- 1/2 cup shredded coconut
- coconut oil for cooking
How-To:
1. Make sure the fish is thawed, then dry it with paper towels.
2. Put the shredded coconut into a shallow dish.
3. Dip the fish pieces into the egg mix, make sure its covered on all sides. (Another option would be to marinate the fish)
4. Place the fish in the bowl with the shredded coconut and flip it over.
5. Heat the coconut oil in a pan and cook the fish until you get a golden brown crust on both sides.
6. Enjoy with steamed veggies and rice.
